Umbrella Jimmy is made using the skin contact method for making rosé. After the red grapes are brought into the winery, the skins are left in contact with the juice for 12-48 hours in order to gently flavor and pigment the wine. After that time on the skins, the grapes are pressed and the fermentation is finished like a white wine.
